Fluffy Gluten-Free Pancakes
Ingredients
2 c. Bob’s Red Mill All-Purpose Gluten-Free Flour*
2 Tbs. sugar
2 tsp. baking powder
2 tsp. baking soda
2 tsp. guar gum*
1/2 tsp. salt
2 eggs (or EggReplacer equivalent)
1 tps. vanilla extract
1/4 c. olive oil
2 c. butter(soy)milk (2 cups of soy milk + 2 Tbs. vinegar: mix and let sit for 5 minutes)
Directions
Mix dry ingredients in medium mixing bowl.
Mix wet ingredients in another bowl.
Combine the two mixtures. (whisk it, blend it, whatever)
Pour by 1/4 to 1-2 cup onto medium heat non-stick pan (or well-seasoned cast iron pan)
Cook it.
Eat it.
Notes:
*I get both these things from natural food stores. They’re the most readily available gluten-free mixes.

Except ME and every other medical student/intern/resident/doctor..
The days I get to sleep were always bitter memories I would often wish to experience again.
And their significant others. I just want a full weekend of sleeping in, movies and fucking. Is that too much to ask for?
But, I have a 10-page paper due by the end of the day, and almost everyone I love in Portland goes/went to PNCA. So, I’ll have to avoid that campus. :(

I also get to (if I get my paper done) go to the AGLSP conference. One of the sessions I’m particularly interested by takes place at 1:30 today. I hope I finish my paper by them. I am the slowest muthalovin’ writer EVAR!

I get to gallery attend at Place today and chat with some rad folks. We’ll mostly talk shit about whiteness. It’s fun as hell, y’all. Seriously, though. We’re each working on pieces dealing with identity with the question of whiteness in mind.
Oh! Oh! I also get to pick up some blank panels from People’s Art of Portland. :D I’ll finally get to start those paintings I’ve been wanting to do. (I didn’t have the time/money to get/make panels). Pretty excited.
